We have turned the vegetable consumption into a game that is working – we lovingly call it “pick 3.” Quite simply, I cut up a bunch of veggies, put them in a Tupperware, add a bit of water to the bottom and keep them chilling in the refrigerator. For most meals, I just pull out the Tupperware and the kids get to choose any 3 different veggies to eat! Sometimes, the number changes depending on whatever else we may be eating.
